You Brew You

  • There are a few Chemex-shaped brewers out there. Combine one with a quality burr grinder, your kitchen scale, and something to pour semi-accurately with and you’ll be set.

Step 1: Prep Your Brew

  • For a 6-cup Chemex, measure 45 grams of coffee.
  • Prepare your Chemex filter, fill your kettle with hot water, and then rinse the filter. Make sure to watch the video below for filter tips.

Pro tip: Don’t forget to dump your rinse water out before you brew!

Step 2: Grind Coffee

  • Grind coffee on the #18 setting in the Baratza Encore grinder.
  • If you’re using another grinder, try to aim for a grind that is similar to coarse Kosher salt.

Step 3: The Bloom

  • Add ground coffee into the Chemex filter.
  • Place on your scale and press the tare function.
  • Pour just enough 200º water to saturate all of the grounds, around twice the weight (90 grams) of coffee.
  • Let the brew rest for about 30 seconds, or until the bubbling dissipates.

Step 4: A Few More Pours

  • Begin slowly pouring the water in passes around the filter bed, increasing the weight of the brew by 200 grams each time until you hit 750 grams total. This slow, careful infusion is key to thoroughly saturating the grounds and achieving even extraction.
  • As you pour each pass, note the color changes where you pour and do your best to make the top an even color. Focus each pour on spots that are darker or have floating grounds, etc.

Pro tip

Three passes are usually enough to extract all of the goodness, aim for 4-5 minutes of total brew time.

Step 5: Waiting is the Hardest Part

  • Once you reach your total weight (750 grams, in this case), let the water drip through and note the bed of grounds, it should be flat.
  • You can adjust your brew recipe based on strength or the amount of coffee you need. We suggest 1 part coffee to 16 parts water but you brew you, increase or decrease the strength to what tastes best!
